lentils, ginger and a pinch of asafoetida, cooked in a delicious tomato - yogurt sauce.

Eggplant With Cumin Rice - Eggplant, with  jasmine rice, green bell pepper,  
onion, vegan chicken broth powder containing: (cornstarch, salt, sugar, hydrolyzed

Middle Eastern Eggplant - Bouranee Baunjan - Chakah yogurt is made by
draining yogurt in a coffee filter. Fry the eggplant lightly with onion in oil, then layer
with onion, green pepper, tomato slices and a pinch of hot red pepper. Now simmer  
in water. The chakah is mixed with garlic and is served under and over the eggplant.

Eggplant in Yogurt - Baked eggplant cooked with a heaping of sauteed onions, a
blend of garlic, ginger, coriander, cumin, turmeric, cayenne and salt. Finished with a
sugared yogurt.
