Fried Moloukhia - Fry some lamb with cinnamon and black pepper, stew until
tender, then add to fried Molokhia, onions, garlic and cilantro. Stew again and serve
garnished with chicken that was browned with pepper and braised until tender.

prepared by ancient Jews and is known also as "Jew's Mallow". The name Melokhia
means "a dish to kings" and around 1000 AD it's consumption was banned by
Fatimid Caliph al-Hakim. It is a nutritious green that has a texture similar to okra and
looks like spinach.
