2 egg yolks
3 Tb lemon juice
2 large shallots, finely diced
1 Tb Dijon mustard
2 cups extra virgin olive oil
salt and pepper
1 packet of Spice 'N Easy™ Fines Herbes
In bowl, whisk together egg yolks, lemon juice, shallots and mustard.
Drizzle oil in thin, steady stream, whisking constantly until emulsified.
Add salt and pepper to taste.
Add half of the Spice 'N Easy™ Fines Herbes.
Cover and refrigerate.
Add remaining Spice 'N Easy™ Fines Herbes before serving.
