1 1/2 lb lean lamb, cut into bite sized chunks
2 Tb honey
2 tsp Spice 'N Easy™ Ras el Hanout blend
1 pint vegetable stock
2 Tb olive oil
2 large onions, sliced
2 garlic cloves, sliced
salt & black pepper
1 oz sliced almonds, toasted
Add the oil to a large saucepan or deep-sided frying pan and fry the onions until
soft. Add the garlic and saute until golden brown. Remove from heat with slotted
spoon and set aside.
Fry the lamb chunks in remaining oil adding more oil if needed. Fry lamb until
browned, add onions and garlic back into the pan.
Add Spice 'N Easy™ Ras el Hanout, salt and pepper while stirring well to coat
everything.
Add vegetable stock and bring to the boil. Reduce heat and simmer for 1 hr 30 mins.
Add the honey and cook another 30 mins. or until the lamb is very tender.
Serve with rice and granish with toasted almonds.
